Mojo Verde – so green, so healthy, so tasty!

It’s like holiday on the plate, the taste of a spanish island: Parsley, cilantro, fresh lemon and almonds are the main ingredients of this Mojo Verde.

Polyphenoles, chlorophyll, plenty of vitamines and minerals. A real „health bomb“!

I made my lowFODMAP-version of a Mojo – means: no garlic or onions (just a little spring onion green) since I have a intolerance to them.

My Mojo Verde works with the typical potatoes – the papas arrugadas, salty, wrinkled potatoes from the canary islands. We love it also with grilled veggies, salmon or some chicken breast.

ZUTATEN

  • 1 bunch of cilantro
  • 1 bunch of parsley
  • 1 spring onion (just the green part)
  • 1/2 stalk of celery
  • 2-3 tbsp olive oil (high quality, extra vergine)
  • 1 tsp lemon juice, fresh squeezed
  • grounded black pepper
  • seasalt
  • 1 tbsp grounded almonds

ANLEITUNG

Wash and dry the herbs. Take the leaves and half of the stalks and chop them. Cut the spring onion and celery in smaller pieces.

Put all ingredients in a Food Processor and mix until smooth. If necessary put some extra olive oil in the mojo - it should be smooth but not too fluent. Taste it and add more salt and pepper if needed.
